January class schedule at the Chef Studio

THE SPIRIT OF THE KITCHEN:
Classes for cooks whose skills range from beginning to advanced

Begins January 3rd, ends February 24. Following Session March 5th thru April 27th

We connect the dots between the mysteries of food and your interests. We are after real, tangible understanding. We educate.


The full-time Diploma course takes an insightful approach that leads to independent thinking. Monday thru Fridays, 9 AM to 3 PM allows plenty of time to examine and understand food as well as cooking in great depth.

It is for cooks who want to get inspired at work or home by learning new ways of thinking to improve cooking performance. Call for a visit or an interview

EVENING CLASSES – Meet for 8 weeks
Mondays and Thursdays – 6 to 9PM –
Plus one Saturday a month
Complete four 8-week sessions
and earn a coveted diploma.

Each night begins with a snack, and ends with a meal. Sandwiched in between is hands-on learning focused on solid technique, discipline, and application so you get how cooking sits on a solid foundation. We want you to know how make harmonious menus.
FOUR WEDNESDAYS, Fridays or Sundays
a number of new short series for those with time constraints but love food and learning. Each series involves just 4 sessions, one night a week.

[1] One series is on Pastry with Kristen Murray (Sundays)
[2] a second is Indian Cooking with Kaaren Bedi (Wednesdays)

NEW SERIES:
[3] The Basics of cooking (Wednesdays eve)
[4] also, Cooking Basics (Friday afternoon or Saturday day)

The Basics explained:
cooking for the novice,
hands-on lessons in small groups

You will learn
(1) how to create simple dishes
(2) the hows and whys of seasonal ingredients,
(3) that showcase flavors, i.e. taste great.

We focus on:
[] understanding recipes
[] the practice of good techniques
[] knife skills
[] cooking methods
[] safety in preparation & using equipment,
[] measuring ingredients
[] seasoning to taste
[] presenting prepared dishes

Laura Content in conjunction with Robert Reynolds will teach participants to prepare simple dishes with balanced flavors and textures and practice the skills they are learning. The recipes are rounded out to create an entire menu for the evening.

The goal is to gain kitchen confidence and to gain new ideas for future cooking adventures.

    Hi-

    I’m interested in the new basics series. Either The Basics of Cooking on Wed, or Cooking Basics on Saturday. I’m not exactly clear on the difference between the two courses other than the day they meet. I’d prefer Wed eve but the Saturday class is probably best for me since I often travel during the week.Have you determined a price or exact dates?
